Gooseberry Patch

Have I mentioned before that I love Gooseberry Patch?? Well, I do.


Here's a recipe that we love from one of their books:
Cranberry-Pecan Pumpkin Bread

2  15-oz. cans pumpkin
2/3 c. milk
1 c. oil
4 eggs, beaten
3 c. sugar
3 c. all-purpose flour
1 T. baking soda
1/2 t. salt
1 t. cinnamon
1 t. nutmeg
1/4 t. cayenne pepper (we dont use this)
1-1/2 c. chopped pecans
1-1/2 c. sweetened, dried cranberries

Mix together pumpkin, milk, oil, eggs and sugar in a large mixing bowl; set aside.
In a medium bowl, sift together flour, baking soda, salt and spices; add to pumpkin 
mixture. Stir in nuts and cranberries. Pour into three greased 9" x 5" loaf pans, 
filling each 1/2 full. Bake at 350 degrees for one hour, or until done. Cool completely
before removing from pans. Makes 3 loaves.

We hope you enjoy it as much as we do!
Bake this recipe in mini loaf pans for even MORE treats to share...just adjust 
the baking time accordingly and test loaves with toothpicks to make sure they're done in the middle.

Disappointed

Well, my sil couldn't get the WW books.  Apparently, they are out nationwide.  So, I had to bid on ebay.  I will find out in 7 hours or so if I won.  LOL.  Anyway, here's a snack recipe.  Can't remember where I found it.


No-bake Granola Flax Treats

1/4 cup margarine
4 cups miniature marshmallows
1 cup quick cooking oats
1 cup crushed cinnamon graham cracker crumbs (I used honey grahams instead)
1/2 cup dried cranberries
1/2 cup dry roasted sunflower seeds
1/2 cup ground flax

Melt margarine in a large saucepan over low heat; add marshmallows and stir continuously until
mixture is smooth. Stir in oats, graham cracker crumbs, cranberries, sunflower seeds and flax.
Mix until thoroughly combined. Spray 8"x8" baking dish with non-stick cooking spray. Cool
completely before cutting into squares.

So exited!

I am so exited!  Tonight my sister in law is going to her Weight Watchers meeting and picking up the books and point calculator I need to finally start.  I want to be healthy and a good example to my kids.  Sam and I had to have a healthscreen done at his work yesterday (weighed, waist measured, bloodwork, and blood pressure taken).  The good news is that Sam has lost 75 pounds so far and my cholesterol went from 300 to 117 in about 2 years with no medication.  I am thinking of also trying to go low carb, not sure on that...yet.

Sienna last Saturday with her cousin Evelyn

This was taken shortly before they both got their ears pierced.  Sienna was 14 weeks 6 days.  I think Evelyn is almost 12 weeks.

They both did great.  They are so cute together.

2011 word of the year

Didn't do that great with last year's word.  I have been searching for my word for this year.   I think strength will be my word for 2011.  I need to strengthen my faith, mind, and body.  I still have 50 lbs to lose.  I will read the Bible or other publications daily.  I will strengthen my life this year.

Strength it is!!!
