2011 word of the year

Didn't do that great with last year's word.  I have been searching for my word for this year.   I think strength will be my word for 2011.  I need to strengthen my faith, mind, and body.  I still have 50 lbs to lose.  I will read the Bible or other publications daily.  I will strengthen my life this year.

Pumpkin Twinkamisu

Just found this at Real Food for Real People.  NUM!

Pumpkin Twinkamisu
1 package (15 ounces) Hostess Twinkies (10 Twinkies) 
1 package (8 ounces) cream cheese, softened 
1 cup confectioners' sugar 
1 container (8 ounces) frozen nondairy whipped topping, thawed, divided 
2 packages (3.4 ounces each) instant vanilla pudding 
1 can (15 ounces) pumpkin 
1 ½ teaspoons pumpkin pie spice 
1 cup milk 
Additional pumpkin pie spice 

Slice Twinkies in half lengthwise and place cream-side up, in single layer in 9 x 13-inch baking dish. Using a mixer, blend together cream cheese, confectioners' sugar and ½ of whipped topping until smooth. Spread evenly over Twinkies. Combine pudding mix, pumpkin, pumpkin pie spice and milk. Whisk until well blended and layer over cream cheese mixture. Carefully spread remaining whipped topping over pumpkin. Lightly sprinkle with pumpkin pie spice. Refrigerate several hours or until set. Makes 9 to 12 servings.

Pumpkin Chocolate Chip Cookies

These are so good!  I have made them 4 times in like 4 or 5 days.  :)  They are soo soft and good!  Enjoy!

White Chocolate Chip Macadamia Nut Cookies

White Chocolate Chip Macadamia Nut Cookies

1 cup canned pumpkin
1 cup sugar
1/2 cup vegetable oil
1 egg
2 cup all-purpose flour
2 tsp baking powder
2 tsp cinnamon
1 tsp nutmeg
1/2 tsp salt
1 TBSP warm milk
1 tsp baking soda
1 TBSP vanilla
2 cups white chocolate chips
1/2 cup chopped macadamia nuts

Combine pumpkin, sugar, vegetable oil, and  egg.
In a separate bowl, combine flour, baking powder, cinnamon, salt, nutmeg.
Dissolve baking soda in milk and stir in.
Add flour mixture to pumpkin and mix well.
Add vanilla, chocolate chips, nuts.
Spoon onto greased cookie sheet and bake at 350  for 10 mins or until slightly browned.

Sienna

Sienna Renee was born on Sept. 26th via Csection.  She was born at 33 weeks 1 day and was a big girl.  She was 6 lb 14 oz and 19 1/2 in long.  She spent 20ish days in the NICU.  Was home for a week and was in the hospital in Salem then transferred to Doernbecher's Children's Hospital for a UTI (bladder infection) caused by Ecoli.  She is doing much better now.  She's been home for 2 weeks now.  She weighed 9 lb 8 oz this week.  She is in the 50% for weight now.  Thanks for all the well wishes.
