So happy
Well, we bought a Ford Expedition. It's going to take some used to parking that thing, LOL. We also just found out this am that we got the apartment. Can't wait to move and have my own space. The girls can't wait to get their own room. All is well.

Baked Apple Pancake
Baked Apple Pancake
4m: Gooseberry Patch
4 apples, cored, peeled and sliced
1/2 cup butter, softened and divided
1/2 cup brown sugar, packed
1 tsp cinnamon
6 eggs
1 cup all-purpose flour
1 cup milk
3 tbsp sugar
Combine apples, 1/4 cup butter, brown sugar, and cinnamon in a microwave-safe bowl; heat on high setting about 2-4 minutes, until tender. Spoon into a lightly greased 13x9 baking pan and set aside. Combine eggs, flour, milk, sugar and remaining butter; blend until smooth and spread over apple mixture. Bake at 425 degrees for 25 minutes. Serves 6-8.

1 loaf french bread, sliced
6 eggs
1 1/2 cup milk
1 1/2 cup half and half
1 tsp vanilla extract
1/8 tsp nutmeg
1 tsp cinnamon
Arrange bread in lightly greased 13x9 baking pan; set aside. Beat together remaining ingredients; pour over bread. Cover; refrigerate overnight. Spread topping over mixture; bake at 350 degrees for 45 to 55 minutes. Let stand 5 minutes before serving. Serves 6-8

Crockpot and Jordan's nite at the er
Had to take Jordan into the er a couple of nites ago. He has a bad case of croup. The steroids they put him on suck. It works but the pharmacist warned me they would effect how well he slept. I got a total of 3 hrs last nite. Anyway, here are some crockpot links I found and another cafe rio pork recipe. Enjoy!

1 can of coke or pepsi (not diet)
2 cups of packed brown sugar
1 16 oz. jar of Salsa (I used Pace Chunky Medium)
cook all day in crock pot...shredd & eat!

Layered Lemon Pie

1-8 oz package cream cheese, softened
1/2 cup sugar
1 can (15 3/4 oz) lemon pie filling
1-8 oz container Cool Whip, thawed
1 graham cracker crust (I removed it carefully from tin pan into a beautiful pie plate I have)
In small bowl, beat cream cheese and sugar until smooth. Beat in 1/2 of pie filling. Fold in cool whip. Spoon into crust. Spread with remaining pie filling and refrigerate for 15 minutes or until serving. Refrigerate leftovers (if there are any).
