Cheesy Broccoli Quinoa
Serves 4
1 c quinoa, well rinsed
1 1/2 c vegetable broth or chicken broth
2 c broccoli, chopped
1 c shredded cheddar cheese
salt and pepper, to taste
Bring the quinoa, broth, and chopped broccoli to a boil over medium heat, reduce the heat and simmer, covered until the broth is absorbed & quinoa is tender, about 13-17 mins. Mix in the shredded cheese, until it melts. Season with salt and pepper.
