Chinese Fried Rice

Chinese Fried Rice
From Gooseberry Patch


3 tb oil
1 c cooked chicken, pork or shrimp, cooked
2 eggs, beaten
3/4 tsp salt
1/2 tsp pepper
3 c cooked rice, chilled
2 tbsp soy sauce
2 green onions, snipped

Heat oil in a deep skillet over medim heat.  Add meat and cook for one minute.  Add eggs, salt and pepper; cook, stirring constantly, until eggs are set.  Add rice and soy sauce; cook, stirring constantly, for about 5 minutes, until rice is heated through.  Garnish with green onions.  Makes 4-6 servings
