I haven't had this in ages.  It's so good.  :)  There are a ton of variations here.  I think the Caramel Apple and Mounds Bar one sound interesting.  Enjoy!

Chocolate Chip Pudding Cookies

These are so good!  I think I got them from an Amish Cookbook.

2 1/4 cup flour
1 tsp baking soda
1 cup butter, softened
1/4 cup sugar
3/4 cup packed brown sugar
1 pkg (4 serving size) vanilla instant pudding
1 tsp vanilla
2 eggs
12 oz pkg chocolate chips

Mix flour and baking soda; set aside.  In a large mixing bowl, combine butter, sugar, brown sugar, pudding mix, and vanilla; beat until smooth and creamy.  Beat in eggs.  Gradually add flour mixture; mix well.  Stir in chocolate chips.  Drop by rounded teaspoonfuls onto cookie sheet about 2 inches apart.  Bake at 375 for 8-10 minutes.  Makes 3 dozen cookies.
