Mexican Tot Casserole

Mexican Tot Casserole
Serves 8

1-32 oz bag tater tots
1 lb ground beef or ground turkey (I use turkey)
1/4 cup taco seasoning mix
1 cup water
1 can corn, drained
1 small can olives, drained
2/3 cup salsa
3 cups mexican cheese blend, shredded

Preheat oven to 350.  Cook meat and add taco seasoning and water.  In greases 3 quart baking dish, spread salsa to cover bottom thinly.  Then add beef spread evenly.  Add corn.  Next layer cheese-leave 1/2 cup to put on top.  Layer olives and tots.  Sprinkle rest of cheese on top.  Bake for 1 hour.

Orange Oomph from Jamba Juice

Not sure where I got this, but it is so good!

In a blender, pulse 1 cup orange juice, 1 cup pineapple or other citrus sherbet, 1 cup hulled strawberries, 1/2 cup blueberries, and 1/2 cup ice on low for 30 seconds; then pulse on high until mixture is smooth.  Serves 2.

Apricot Granola

I love apricots and this is so good!

Apricot Granola


10 cups rolled oats
1 tsp salt
1 tsp vanilla extract
1/4 cup maple syrup
1-10 oz jar apricot jam (may substitute any other flavor jam)

Preheat oven to 350.  Mix all ingredients.  Spread out on large cookie sheet.  Take out every 5 minutes, to stir.  Store in airtight container.

Elisa's Fruit Salad

Our niece made tons of this at our wedding.  I LOVE this!

Fruit Salad

1-2 large cans fruit cocktail, drained
1 can pineapple chunks, drained
1 can peaches, chopped and drained
3-4 bananas, sliced
2 jars of maraschino cherries, drained, and sliced
1 bag of walnuts, chopped--optional
1-1 1/2 bags of pastel colored marshmallows
1-1 1/2 containers of Cool Whip
any other fruits can be substituted or added just adjust Cool Whip and marshmallows (we also like canned apricots and pears), really any thing can be added

Make sure all canned fruits are well drained.  In large bowl, combine all fruits (chopped/sliced).  Then add marshmallows evenly and mix.  Add Cool Whip and mix.  Put chopped walnuts on top or mix in.  Chill before serving.  This serves a ton.

Summer Slurpee

I got this from Miserly Moms.  I have been craving slurpees lately and this hits the spot for me.

Summer Slurpee

4 cups ice cubes
1 1/2 cups water
1 package Koolaid, unsweetened, any flavor
3/4-1 cup sugar (I have used Splenda)

Place all in blender, water first.  Blend on low speed, gradually working the speed up to high.  Blend from 1-3 minutes.  Serve immediately.

Salads

I posted this on Cloth Diaper Nation already, but thought I would repost on my blog.  I want to thank my Aunt Tonya, Aunt Brenda, and friend Loleta for some of the recipes.

Here are a couple of recipes. Will post more when I have more time to type out.

Spaghetti Salad

1 lb spaghetti noodles
1 cucumber, peeled and chopped
1 tomato or 2 roma tomatoes, chopped
1 green pepper, chopped
1 red onion, chopped
1/2-3/4 bottle Italian salad dressing
1 tsp Salad Supreme seasoning

Cook spaghetti for 10 minutes after boiling, WONT be done all the way. Drain. Rinse under cold water. Add veggies and combine with pasta. Add dressing and Salad Supreme. Mix well. Chill before serving.

Yummy Fruit Salad

1-21 oz can peach pie filling
1-15 oz can pineapple chunks or tidbits, drained
1-15 oz can mandarin oranges, drained
1-20 oz package frozen strawberries, thawed and sliced
2 bananas, sliced

Mix and serve. May add second can of pie filling to make enough to fill a large Tupperware container.

My Aunt Brenda's Macaroni Salad
**I seriously  this stuff!!

1 package small salad roni, cooked
1 green pepper, chopped
3 green onions, chopped
4 radishes, chopped
3 stalks celery, chopped
Dressing:
1 cup mayonnaise
1/2 cup whipping cream
2 tbsp sugar
1 tbsp cider vinegar
Mix well and add to pasta and veggies. Chill and serve.

Chopped Chicken Salad
1-7 oz package pasta rings, small--cooked, drained, and cooled
3 cups cooked chicken, cut into 1/2 in cubes
1/2 lb. bacon, cooked and crumbled
1 bag Dole Italian lettuce mix
2 large tomatoes, cut into 1/2 in pieces
1/4 cup diced green onion
1/2 cup Italian cheese, shredded
1-16 oz bottle fave dressing (I use Cheese Fantastico or something like that)
pepper, to taste
parmesan cheese

Chop lettuce mix into small pieces. Mix all ingredients, adding enough dressing to coat (about 1/2-3/4 of bottle). Serve with grated parmesan cheese and pepper.

Crab Pasta Salad

Mix together 1 container clam dip, 1 lb seashell pasta, cooked and drained, 1 lb imitation crab, chopped, 1 cup mayonnaise, 1 small can sliced olives, 1/2 cup chopped celery, 1/2 cup chopped onion, seasoning salt and pepper, to taste. Chill before serving.

Lentil Loaf

EASY LENTIL LOAF
From "The New Farm Vegetarian Cookbook".

Cook 1 1/2 C of rinsed lentils in 3 1/2 C of water until tender.
Partially mash lentils and mix with 2 medium onions that have been sauted in a little water. Add to the onions and lentils:

2 C cooked rice
1 tsp garlic powder
1 tsp salt
1/4 C catsup or barbecue sauce
1 tsp sage
1/2 tsp marjoram

Press into a sprayed loaf pan and spread catsup or barbecue sauce over the top.
Bake for 1 hour.

I got an ergo

Well, my ergo baby carrier finally came in the mail today.  I bought it gently used off ebay.  Can't wait to try it out.  I might have to get a waist extender though, LOL.  Here's a pic of the one I got.

Update on baby #5

Last week I went to the er because I was cramping really bad and spotting.  They did another hcg level and it went up to 22,000 something from 9000 or so.  :)  Also, they did another ultrasound and I got to the see baby's heartbeat.  It was strong at 151.  I am officially due November 12, 2010.  I have strong feelings this little one is going to be a girl (I have been right with all 4 others), but only time will tell.   I am thinking of Dillon Joseph for a boy or Ava Renee if it's a girl.  Just thinking though.  My mom is coming up from Las Vegas to Oregon to visit the family in 2 days on Saturday, for a week.  I can't wait.  I am really close with her and miss her dearly.  It's a lot harder to travel with 4 kids then 1, that's for sure.  Well, I guess I will leave you with a good recipe.


corn & black bean salsa

1 can of black beans drained
16 oz. of corn (canned, frozen, even fresh)
1 green pepper, chopped
1 red pepper, chopped
1 cucumber (as much as you want, i used the whole thing), peeled & chopped
fresh cilantro (as much as you want), chopped
1 small bottle of kraft zesty! italian dressing

mix it all together, cover & let it chill in the fridge for about a 1/2 hour or so.
serve with chips or all by itself!
