eating:  Weight Watchers Oatmeal cookie and some chicken
drinking:  ice water, again
wearing:  capri pants and red tee
feeling: exhausted from only sleeping 5 am-8 am
weather:  looks like it might be a nice day
need: to take a nap
thinking: about what I am making for lunch.  Kids want chili con carne or ramen noodles.  :(  I am going to have a sandwich on a bagel thin and maybe a light yogurt.
enjoying: having the internet again.
wondering: what I am getting my swap partner for the Momma swap
internet find: Recipe Scrapbook   Looks neat.  I want to do this.

drinking: Ice water
wearing: hot pink cotton tee and black capri pants
feeling: tired but can't sleep
weather:  was really nice today.  Cold and windy right now.
need: to go to bed
thinking: Really enjoyed date night with dh and my sil and bil.  We ate Mexican food (I had a Chicken Fajita salad with no dressing, so good) and watched Fast 5. Great movie!
enjoying: quality time with dh
wondering: if tomorrow is going to be a better day with the kids.  I hope~
internet find:  Alphabet Wall  I really want to start collecting letters to do this in the living room.

Pina Colada Fudge

Pina Colada Fudge

1(12-ounce) package (2 cups) white vanilla chips
1 (3.25-ounce) jar macadamia nuts, chopped, toasted
1 (16-ounce) can Creamy Supreme Vanilla Frosting
1/2 cup chopped dried pineapple
1/2 cup coconut, toasted
1 teaspoon rum extract
1 teaspoon coconut extract

Line 8- or 9-inch square pan with foil, extending foil over edges. Place chips in medium microwave-safe bowl. Microwave on high for 1 to 2 minutes or until melted, stirring every 15 seconds until smooth.
Reserve ¼ cup nuts for garnish. Add remaining nuts and all remaining ingredients to melted chip mixture; mix well. Spread in foil-lined pan. Sprinkle with reserved nuts. Refrigerate 1 hour or until firm. Remove fudge from pan by lifting foil. Remove foil; cut into squares.
Makes 36 squares.

NOTE: To toast macadamia nuts and coconut, spread on separate small cookie sheets; bake at 350 degrees for 5 to 8 minutes, or until light golden brown, stirring occasionally.

French Toast Waffles

4 eggs
1/2 cup milk
2 tbsp butter, melted
1 tbsp sugar
1/2 tsp salt
8-10 bread slices

Preheat waffle iron.  Spray with a light coating of cooking spray.  In a shallow bowl, combine eggs, milk, melted butter, sugar, and salt.  Dip bread slices, one at a time, in egg mixture.  Bake in waffle iron 2-3 mins or until brown.  Top with Strawberry Butter.

Strawberry Butter

1/2 lb butter-softened
1-10 oz pkg frozen strawberries, thawed and drained
1/2 cup powdered sugar

Combine all ingredients with a mixer or food processor until smooth and creamy.  Serve at room temperature.

Coleslaw Salad

2-10 oz pkgs broccoli slaw mix
1-16 oz bottle coleslaw dressing
1-8 oz pkg dried cranberries
salt and pepper, to taste

In a large bowl, combine the slaw, dressing (use more or less depending on your taste), cranberries, and salt and pepper.  Mix well.  Cover and refrigerate until ready to serve.  Serves 8.

Chinese Fried Rice

Chinese Fried Rice
From Gooseberry Patch


3 tb oil
1 c cooked chicken, pork or shrimp, cooked
2 eggs, beaten
3/4 tsp salt
1/2 tsp pepper
3 c cooked rice, chilled
2 tbsp soy sauce
2 green onions, snipped

Heat oil in a deep skillet over medim heat.  Add meat and cook for one minute.  Add eggs, salt and pepper; cook, stirring constantly, until eggs are set.  Add rice and soy sauce; cook, stirring constantly, for about 5 minutes, until rice is heated through.  Garnish with green onions.  Makes 4-6 servings
